I am a lover of staying in, especially when it comes down to celebrating those overly celebrated holidays like Valentine's Day. I also know it takes much more work to prep a meal at home than it is to book a reservation.
Of course, I know everyone is super busy with kids, work, and life in general, so this isn't me judging the way you celebrate going out to eat. The good part about booking a reservation at your favorite restaurant is all the work is done for you, dishes are washed, food is cooked, and your kitchen stays clean for once.
Since having Jaxon and not being able to leave the house, this Valentine's Day like many others we will be spending it at home with our little bundle of joy. It has kind of become a thing for E and I that we spend time in the kitchen together cooking and taking pictures for this blog and instagram. Before I use to get are you seriously taking pictures right now, and now I hear aren't you going to take a picture of this?
The other night I made dinner and it had to be in a flash, E was still at work and Jaxon doesn't wait for his bottles.
I picked up a packet of Pork, I'd rather Pork Chops but this will suffice as well.
I seasoned it with Garlic Powder, Black Pepper, and Salt. I added 2 tablespoons of Olive Oil to the skillet and waited for them to turn a nice crisp brown color.
We had some leftover Bella Mushrooms from a previous dinner so I chopped those up with some onions and tossed them into a skillet with a tablespoon of Olive Oil until the mushrooms softened and the onions were transparent. You may want to salt and pepper these to taste.
After the Pork was crisp brown to my liking I wanted to add in a cream of mushroom to have a gravy instead of the typical "dry" Pork. You can remove the chops from the pot and let the cream of mushroom soak up the seasoning from the chops and then return the chops back in with the cream of mushroom once it is warm.
You can add any sides you want I just tossed a can of corn and a can of french style green beans in a pot, and added salt, pepper and garlic powder. And you are done.
You can also pair this with some white rice if you like the cream of mushroom goes well over the top. If you don't like mushrooms you can always use cream of chicken. If you use either with the salt be careful of the salt you season your pork or chicken with.
