Pork Chop with Asparagus and Mash potatoes

I made the dinner the other night and it was pretty simple and delicious. I have been messing around lately with some fancier dinner ideas but I kept it pretty simple with this one. 

You can totally use thicker chops if you like, if you do just factor in a longer cook time.  

For this meal, I prepped my asparagus as normal lemon juice salt and pepper and before I plate it I’ll add some grated Parmesan for little extra umph.  

I cut the red potatoes into quarters boiled with some salted water, once they were soft enough for a fork to go through without too much pressure, I added a tablespoon of butter, salt and some Italian season [not too much I’d say about 1 teaspoon because it is strong].  

Before seasoning the pork I put a gracious amount of olive oil then I seasoned the pork with salt & pepper, thyme and garlic powder. When you use a dry ingredient like oregano, Italian seasoning, rosemary, or thyme a good rule of thumb is to put olive oil or a good cooking oil in order to not have the seasoning burn quickly. Keep the heat at medium/high temperature. 

It went over well with the husband so I will probably try it again but we aren’t huge pork eaters besides bacon so it will be a few months.

Baked Garlic Parmesean Chicken Wings with French Fries

Okay if you are anything like myself you like crispy wings and fries but as I have aged, I feel like I can't handle all the fried foods like I used to.

Plus it's just not really healthy and with J starting to eat the food we are eating I'd rather do it as healthier as possible.  

The other night E and I were craving wings but I wanted to try to make wings in the oven because it is really tough to hold J in one hand and then fry wings and fries in the other. 

I found this recipe from evolving table and I doubled it because I had two packages of wings that I picked up from Costco [the pieces are already separated and took a lot of work out of cutting up wings].

I would also recommend grated Parmesan after the wings are fresh out the oven, and less black pepper. 

Also the As Seen on TV baking dish did well with the fries but you have to put it on broil for about 6 minutes after you make them for an extra crisp. I'll use it for fries in the future but probably not anything else besides that.  


Ricotta Stuffed Salmon with Asparagus and Quinoa

Alright y'all, so I have been hearing about this new diet that is all the rave.  Now you guys know how I feel about diets, they aren't really my thing.  

But I don't mind finding recipes within a specific diet regime that works and taste delicious, especially if they are simple and easy to make.

Currently I have been hearing a ton of things about this "Ketogenic" diet, it is a low carb, appropriate protein, high fat diet that is beneficial for people with diabetes or a history of family diabetes, especially with me having gestational diabetes during pregnancy if we ever decide to have another one it is probably a great diet for me to be on.

Mozzarella Chicken with Avocado Brushetta

The other night I was looking for a really easy recipe but didn't want to really follow instructions, I just needed food inspo. 

When I used to live with E's grandma she had this habit of making simple fruit and cheese plates and on occasion cutting tomatoes, slicing cucumbers and having it for a snack or even sometimes dinner. 

She is an amazing cook but I can imagine after the many, many years of cooking [she would always tell us about the days when she worked as a line cook at a diner] one can grow a little tired of the over the top, sprinkle some love on it type of meal. 

So sometimes [more often than not] I much rather the simplicity and freshness of a dinner than the eccentric over the top ones, I found this recipe on Pinterest and ran with it. 

I seasoned the chicken the way I like to sprinkle some salt, pepper, garlic powder, and Italian seasoning.  Heat your olive oil in a pan, place chicken in pan and let it cook. 

The recipe calls for 4 chicken breast I just took two and sliced them in half, I already did my arm work out and didn't really feel like beating some chicken into it's second death so slicing them in half did the trick. 

Once the chicken was in the pan cooking, I chopped my tomatoes and tossed it with the semi dried basil [the recipe calls for fresh basil but my grocery store didn't have it], I then added in salt and pepper plus lime juice and waited to cut the avocado until it was time to top the chicken with the mozzarella. 

I paired the dish with quinoa and some left over avocado.

If you have leftovers make sure you put the leftover brushetta in a separate container unless you are cool with hot tomatoes and avocados, I am not a fan of it. 


If you decide to use a grain whether it is rice or quinoa be sure to put that on prior to starting your chicken. 

Slice 2 chicken breast in half and sprinkle salt, pepper, Italian seasoning, and garlic powder on each side of sliced chicken breast. 

Pour about 2 - 3 tablespoons of olive oil into saucepan [depending on size I just try to have an even coat of olive oil on the bottom of the pan. 

Put your heat on medium heat for your stove. Once your oil is heated then place your chicken in the saucepan or skillet. 

Let that cook depending on the thickness of your chicken breast, I always like a little crispness to my chicken so I kind of pan fry it.  

While all that goodness is going on start your brushetta, just wait to add the avocado so it doesn't brown to quickly. The lime juice will help it but I like to keep my avocado as fresh as possible. 



Panko Crusted Salmon with Asparagus + Wild Rice

You guys! You guys!  If you need an easy dinner recipe to impress someone and you don't cook much, this is IT!

Last weeks dinner was the bomb.com E actually complimented me without me having to fish for a compliment.  I found this on Pinterest of course, Cooking Classy had the recipe and I feel like she knocked it out of the park with this one. 

Seriously, next time my parent's are coming over I am making this definitely.  They will think that I took cooking classes and it is so easy and doesn't require a ton of ingredients.

I am doing my best to eat better because I don't want to waste my work outs on calories I am eating during the day.  I am working on giving up the creamer in my coffee or coffee all together 🙁.

So besides this wonderful recipe, what do you do to eat healthier rather than indulge? 



Visiting Wimberley, TX

This past weekend was the BEST!  The only thing that was missing was E to join in on the fun.  

I can't believe that J is now 6 months old and we went on his first road trip, everything is a first currently and it is so amazing that he is finally here but time is flying and I just wish it would slow down a little. 

We spent the weekend in Wimberley, and it was beautiful.  I can't wait to go back.  There are so many trails for hiking and the place is just beautiful.  I love the quaintness of it all it is so peaceful.  

We stayed at The Mountain View Lodge and it was the most perfect place to stay while in town.  The couple that runs the place is really sweet as well.  You won't get a concierge or room service while there so make sure you are aware of that, pack snacks that don't require a refrigerator, or microwave if you have the urge for a last night snacks. 

We visited a few places while in the area the good thing is that pretty much everything is close to each other so 20 minutes here, 15 there, 5 minutes there.  So it was nice to see a few things while we were in town. 

Things to do in Wimberley

Purgatory Creek - the trails were beautiful and I definitely want to go back to journey and of course take pictures. 

Jacob's Well - my mom wanted so badly to go to Jacob's Well and was a little underwelmed but I thought it was pretty cool.  You have to make a reservation to go swimming and you do have to walk a trail to get there.  I highly recommend wearing tennis shoes and being very careful I slipped a couple of times and I was holding the baby, so mom was freaking out. 

The Wooden Spoon Ice Cream and Yogurt - This is a quaint little spot in town that had frozen yogurt and all of the fixings.  We came here after dinner and it was nice to stop and relax a bit.  It is like your typical Tutti Fruitti or Menchies but better because it isn't some franchise.  It is decorated like a cozy home with cute tables and nic nacs. 

The Leaning Pear - We had dinner here Saturday night and the view is beautiful. I will have to try this place again, I don't think the particular item I ordered of the menu was great the Blanco Pizza had too much sauce and arugala for my liking. I should've went with my gut and got the meatloaf, my mom ordered the chicken with grits and enjoyed it. 


Tilapia + Shrimp with Spinach and Quinoa

As I have said before I am a huge fan of easy cooking.  I also love those intricate detail recipes but I love to save those for more of a weekend I am not in a rush type of meal or when E will help me with those.

I recently picked up some Tilapia and Shrimp from Kroger and wanted to make something quick.  

I seasoned the Tilapia and the Shrimp with the same ingredients, I can't give you any measurements because I just sparingly put it on top of each meat.  I did use butter for the shrimp and Olive Oil for the Tilapia.

The Shrimp and spinach went into the oven and the Tilapia was cooked on the stove top with the quinoa. 

One tip I will always use while making quinoa is pairing it with avocado and cooking it in chicken broth. If you don't have chicken broth I highly recommend seasoning the water before putting it in there, it helps the flavoring tremendously.  Quinoa also doesn't take long to cook at all and use can use any left overs in a salad the next day.

Sambuca with the Houston Food Bloggers Collective

hello there, loves! 

Oh my, oh my Stacy over at The Hurried Hostess invited me to be her plus one at a Houston Food Blogger Collective event and today I am sharing it with you. Of course,  I am no food blogger but I love to eat. E and I do share our dinners from time to time on here, so I am not one to turn away food or drinks.  I mean who does that? 

The event was held at Sambuca in Downtown Houston and while I have been there before it was so nice to have a space that was set aside just for bloggers so they could take pictures and mingle and of course eat.  

The food was delicious 😆 I mean look at this beautifulness down there 🤤.

I have to send a special thank you to Stacy for getting me out of the house, it was fun to get out with you and it not be at a wedding we are photographing 😂. 


There were lobster deviled eggs, croquettes, meat and cheese

Lobster Deviled Eggs, they were pretty good there is just a very smokey taste at the end of it which was a little surprise. I am not a lover of smoked foods so I couldve done without it but otherwise these were delicious.
